Mexican Bean Salad

Ingredients

  • 1 Punnet cherry tomatoes, cut into halves
  • 1 bunch coriander, chopped
  • Grated zest of 2 limes (juice used in dressing)
  • 1 avocado, roughly chopped
  • black beans (1 can, or 2/3 cup dry beans cooked)
  • 2 cobs of corn, boiled in salted water for approx 10 min, cooled, and kernels shaved off with a knife
  • 1 small red onion, sliced finely
  • A small amount of fried sujuk (optional)

Dressing

  • 1 tbsp red wine vinegar
  • Juice of 2 limes
  • 1 tsp ground cumin
  • 1/4 cup olive oil
  • salt + pepper to taste

Method

  • Mix all salad ingredients in a large bowl
  • Put all dressing ingredients in a jar and shake until combined
  • Pour dressing over salad and mix it all up. Enjoy with tortillas & sour cream!
