Ingredients
- 1 Punnet cherry tomatoes, cut into halves
- 1 bunch coriander, chopped
- Grated zest of 2 limes (juice used in dressing)
- 1 avocado, roughly chopped
- black beans (1 can, or 2/3 cup dry beans cooked)
- 2 cobs of corn, boiled in salted water for approx 10 min, cooled,
and kernels shaved off with a knife
- 1 small red onion, sliced finely
- A small amount of fried sujuk (optional)
Dressing
- 1 tbsp red wine vinegar
- Juice of 2 limes
- 1 tsp ground cumin
- 1/4 cup olive oil
- salt + pepper to taste
Method
- Mix all salad ingredients in a large bowl
- Put all dressing ingredients in a jar and shake until combined
- Pour dressing over salad and mix it all up. Enjoy with tortillas &
sour cream!
