Christmas Cake Slice

Prep 15 min + standing, cook 25 min. Makes 18 pieces


  • 150g Raisins
  • 150g Sultanas
  • 150g Currents
  • 175g butter, softened
  • 3/4 cup brown sugar
  • 4 free range eggs
  • 1 cup plain flour
  • 1 tsp mixed spice
  • icing sugar, to dust


  1. Preheat oven to 200C/180C fan forced, and butter and dust a 17.5x27.5cm baking tray
  2. Place the dried fruit in a heatproof bowl. Pour over 2 cups of boiling water and stand for 15 min. Strain well.
  3. Using an electric mixer, beat the butter and brown sugar in a large bowl for 5 min or until pale and creamy. Add eggs, one at a time, beating after each addition. Using a large spoon, fold in flour, mixed spice and fruit. Spoon into pan. Smooth top. Bake for 25 min or until a skewer inserted into the centre comes out clean. Cool completely in pan
  4. Dust with icing sugar, and slice into squares to serve.
