Chocolate Pudding

Ingredients

  • ¾ cup SR flour
  • 2 tbsp cocoa
  • 1½ tsp instant coffee
  • 4 oz butter
  • 2/3 cup castor sugar
  • 2 eggs (beaten)
  • ½ tsp vanilla essence
  • 1-2 tbsp milk
  • 1 tbsp chopped walnuts (or other nuts, eg pecan, almond)

Method:

  1. Sift together flour, cocoa, and coffee
  2. Cream butter & sugar, gradually add eggs & vanilla
  3. Fold in flour, enough milk for soft consistency
  4. Place and spread evenly in well-greased oven dish
  5. Sprinkle chopped nuts over
  6. Pour over the sauce:
    • 1 cup loosely packed brown sugar
    • 1 tbsp cocoa
    • 1 cup boiling water
  1. Cook in 180 degree oven for 35 - 40 minutes

Suggestion:

replace half of the castor sugar with brown and omit cocoa for caramel pudding
