Chocolate Pudding
Ingredients
- ¾ cup SR flour
- 2 tbsp cocoa
- 1½ tsp instant coffee
- 4 oz butter
- 2/3 cup castor sugar
- 2 eggs (beaten)
- ½ tsp vanilla essence
- 1-2 tbsp milk
- 1 tbsp chopped walnuts (or other nuts, eg pecan, almond)
Method:
- Sift together flour, cocoa, and coffee
- Cream butter & sugar, gradually add eggs & vanilla
- Fold in flour, enough milk for soft consistency
- Place and spread evenly in well-greased oven dish
- Sprinkle chopped nuts over
- Pour over the sauce:

- 1 cup loosely packed brown sugar
- 1 tbsp cocoa
- 1 cup boiling water
- Cook in 180 degree oven for 35 - 40 minutes
Suggestion:
replace half of the castor sugar with brown and omit cocoa for caramel pudding
