Cake Yazdi

Makes approx. 18 cupcakes. Preparation time 20 min. Cooking time 25 min.

Cake Yazdi is a delicious cupcake that originates from the city of Yazd. This recipe was translated from Farsi and typed up by Yasamin.

Ingredients:

  • 300g plain flour (2 cups+ 5 Tbsp)

  • 1 tsp baking powder

  • 3 eggs

  • 200g sugar (1 cup)

  • ¼ tsp vanilla extract

  • 2 tsp ground cardamon

  • 175g vegetable oil (¾ cup)

  • 50g thick yoghurt (½ cup + 1 Tbsp)

  • 1 Tbsp rosewater

  • ¼ tsp table salt

  • 2 Tbsp honey

  • sesame seeds as needed

Method

  1. Place patty pans in your muffin tray. Preheat oven to over 210ºC.

  2. Sift baking powder and flour 3 times.

  3. Crack eggs into a bowl and beat for 7 min while slowly adding sugar, vanilla and cardamon. The mixture should look pale and fluffy.

  4. Add the yogurt, rosewater, oil, honey and salt — beat well.

  5. Slowly add the flour mixture with the beater on slow. Beat the mixture for 20 secs each time you add flour so the mixture doesn’t go lumpy.

  6. Fill the patty pans until they are 2/3 full. Make a cross with an oiled knife on each cupcake. This allows it to rise nicely.

  7. Sprinkle with sesame seeds and place in the oven at 210ºC for 15 min then reduce the oven temperature to 180ºC until the cakes are cooked. This should take approx 10 min.
