This is my mum’s recipe for baked Kookoo sabzi.
Kookoo Sabzi
Kookoo sabzi (or herb kookoo) is a simple dish that can be served with salad or bread, possibly as an entree. It’s really easy to make!
Ingredients
- 6 eggs
- 1 potato
- 1 onion
- handful of crushed walnuts
- handful of zereshk (dried barberries)
- about a small freezer bags worth of chopped herbs (dill, chives(thick), parsley, coriender)
- 3/4 cup oil
- seasoning (salt+pepper) to taste
Method
Beat the eggs till they’re all puffy (they go light yellow, but not quite white because of the yolks).
Finely grate a peeled potato and add it in

pour in the oil
add the walnuts and the barberries(zereshk), about a handful of each
add seasoning
add the herbs
stir together, then pour into a small tray lined with baking paper.
cook in 180C oven till one side is baked (looks firm)
cut into pieces, turn over, and cook the other side
You can sprinkle some grated cheese over the top of the baked kookoo and grill for a minute or two if you like.
